I’m kinda’ smitten with overnight oats. Yea, they’re amazing. But the convenience of this recipe is at the top of my list. Y’all. Morning comes and every momma I know hits the ground running. We shuffle some kids on the bus, drop some at preschool and others we carry on our hips all day. The kids go off with breakfast in their tummies and lunch in their backpack. But the mommas – well, if you’re like me you’re driving down the road, coffee in hand and belly growling. It’s so easy to forget to feed ourselves.
I’m not saying that your kids won’t love this recipe – they will! My boys love to share my oats. But we need to take care of ourselves too. And that includes eating.
On Sunday night, I make up 5 batches of my overnight oats – I mix them right up in mason jars. They stay good all week and I have breakfast every morning.
Here’s what makes this recipe – the grated apples. Oh. my. gosh. When the apples are grated, the natural fruit juice comes out. It’s totally different than chopped apples. Try grated apples on your cooked oatmeal too – another favorite of mine! I add the grated apple in the morning before I head out the door – this way the apple doesn’t brown.
There are so many different things you can do with the base of this recipe – add any fruit you like, stir in peanut butter, add cocoa or pumpkin. In the summer, I love to add frozen fruit. If you can’t eat dairy yogurt, try dairy-free coconut yogurt or increase the amount of chia seeds to keep the consistency thick.
