I’ve got a great book to share with you all about kale. It’s Crazy for Kale, in fact!
Kale is one of my favorite greens. It also helps that it’s a super food powerhouse. It’s packed with vitamins K, A, and C. Kale is also high in fiber, contains calcium, iron, protein, and even omega-3 fats.
If you’re new to kale, like I once was, you might wonder what to do with it. The texture is a little chewier than most greens. It’s flavor is a little more intense. It’s a little less common than spinach, romaine, and the ever-popular mixed greens.
But, it’s a green you should get to know. And, if you’re already a kale fan like me, you’re always looking for new ways to use it.
Here are some of my favorite kale recipes :
- White Bean and Kale Soup
- Kale Salad with Apples, Carrots, & Purple Cabbage
- My Favorite At-Home Salad Bar
- Creamy “Pistachio Ice Cream” Kale Smoothie
- Kale, Mushroom, & Quinoa Salad
- Sweet Potato & Kale Hash with Curried Quinoa
- Kale Chips
- Red Lentil Soup with Kale
- Mighty Minestrone Soup
- Detox Smoothie
Let’s All Go Crazy for Kale!
I’m super-excited to share Hallie Klecker’s new ebook, Crazy for Kale! She’s got 40 gluten-free, dairy-free recipes and each one is packed with kale. Of the 40 recipes, 33 are grain-free/Paleo and 31 are vegan or have vegan options.
I went straight to the dessert section first, and immediately put her Chocolate Buckwheat Brownies on my to-make list. Yep, they’ve got kale in them.
Some of the other recipes include:
- Kale & Strawberry Breakfast Salad
- Green Flu Fighter Juice
- Curried Carrots & Kale
- Southwest Burgers with Avocado Kale Slaw
- Lean & Green Lemonade
