Allergen Free and Easy Cooking by Cybele Pascal
When you’re dealing with multiple food needs, getting dinner on the table can be tricky. Cybele has done all of the hard work so that you can make a meal that everyone can eat – and you can get it done in about thirty minutes.
Here’s why I love this book – Cybele has a huge range of dishes from pasta to meats and soups and even gnocchi. (Yes!) She’s tackled the tough-to-replace ingredients like fish sauce, cheese sauce and mayonnaise. In this book, she gives you recipes to eat just about anything you want again. Every dish I’ve made from this book has been outstanding.
Better yet, she’s remade some of the classic take out meals we all miss so much, including deep dish pizza. You’ll also be able to make chicken lettuce wraps, Out-N-In Burgers and nuggets for your kids.
You’ll find a guide for stocking your allergen-free kitchen, something I feel is essential in any good gluten-free or allergen-friendly book. You’ll learn what products she uses and why she feels they’re important. Not every gluten free and allergen friendly product is created equal, so you’ll be able to make wise choices with your grocery budget.
There are seven recipe chapters entitled as follows with a couple of my favs from each noted for fun:
- Soups and Stews, where you’ll find White Chicken Chili and Broccoli Cheddar Soup
- Pasta and Noodles, which has a killer Fettuccinie Alfredo with Bacon
- Casseroles and Potpies; make sure to try the Chicken Potpie with Biscuits
- Chicken and Turkey; Oven Fried Chicken and Chicken Parm? Yes please!
- Beef, Pork and Lamb; Beef & Broccoli Stir Fry and Salisbury Steak with Mashed Potatoes
- Takeout at Home; Pulled Barbecue Chicken Sandwiches with Classic Coleslaw
- Vegan; Vegetable Lo Mein and Portabello Shepards Pie
There is so much value Cybele’s book, Allergen Free and Easy Cooking. It deserves a place on your kitchen counter because it will bring your family together around the table. We all know there is nothing more valuable than the time spent with those you love.
