Don’t let these ugly cookies fool you – they are so tasty! I was laying in bed this morning writing this post in my head (with both boys asleep next to me) and it occurred to me that I should’ve taken pics of the boys standing at the counter eating cookies as they came out of the waffle iron. It was so exciting for them – and it was a lot of fun for me. But I was compelled to do the ‘food blogger’ thing and try to make food look beautiful. These cookies aren’t.
I’ve been messing around with this recipe for a while now. I call them cookies but really they’re a cross between a muffin and a cookie. Almond flour typically makes for softer cookies than your traditional ‘crisp around the edge and chewy in the center’ cookie. They also needed to have just enough moisture to bake because parts of the cookie are thick due to the shape of the waffle iron.
These make the perfect quick treat. And because the ingredients are healthier it’s no big deal if my boys have a cookie at snack time. Instead of baking all of the dough at once, roll it all into balls and bake only the cookies you intend to eat that day. Flash-freeze the rest. To do this, Place the rest of the dough on a cookie sheet lined with waxed paper small enough to fit in your freezer. Pop the extra dough in the freezer and once it’s frozen place it in a freezer-safe container. When you’ve got a sweet craving, set the dough out to thaw while your waffle iron heats up and then bake your cookies. If you don’t have a waffle iron, bake these in the oven at 350F for 8 – 1o minutes.
If you don’t have essential oils on hand, bump up the spice level slightly. The oils give these cookies an incredible pop of flavor that we love. I’ve found that gluten-free baked goods taste slightly different than their wheat counterparts, due in large part to the types of flour used. Coconut and almond are distinct flavors, and those flavors play a role in the finished product. Adding a little more flavoring masks the almond and coconut.
Have fun with these cookies – add your favorite cookie ingredients – nuts, chocolate chips, dried fruit. The best part for me was spending time with my boys. Next time y’all are getting the candid shots.
