Sandi’s diet is a little different than mine – but no worries! You’re always asking me about substitutions so here’s what you can do to make her Nutella Linzer Cookies refined sugar free:
- use coconut sugar instead of white sugar in the cookie recipe
- if you’ve got my cookbook, Simply Sugar & Gluten-Free, go to page 52 and make my Chocolate Hazelnut Spread – it tastes just like Nutella. Or, google ‘refined sugar-free nutella’ and find a recipe that you love.
- try whirling unsweetened coconut flakes in the blender to make ‘powdered sugar’ – here’s how I do it.
