Scones and biscotti are my two favorite gluten-free treats. The texture and slightly-sweet flavor get me every time. They have just enough sweetness to pair perfectly with coffee. I love a good cup of coffee. I’ll take biscotti, scones and hot cup of coffee around 2pm any day.
With Valentine’s Day right around the corner, I had to share some scones with you. Ok – let me a little more specific. I had to make them for myself and they are so good I had to share them with you.
I had my first experience with orange and chocolate close to twenty years ago. My dear friend had a chocolate orange that you whack to divide into a bunch of orange segments. She was so excited to share it with us – and oh. my. goodness. I learned that chocolate and orange is divine.
Here’s the great thing about a good scone dough – you can add just about anything you want and they’ll still be delicious. If you’re not up for chocolate and orange, why not try:
- lemon and blueberry
- raisin and cinnamon
- chocolate and cherry
- chocolate and apricot
- lemon and raspberry
Scones are similar to biscuits in that they both start by cutting the fat into the flour. Make sure your fat is really cold. This ensures that you get a light texture. You also want to take care not to overwork the dough when you’re mixing the ingredients or forming the scones before popping them in the oven as this can make the fat melt too.
Because of Valentine’s Day, I cut my scones into heart-shapes using a cookie cutter. If you choose to go this route, make sure you flour the surface your scone dough is on, your cookie cutter and your spatula. Gluten-free dough is sticky and needs different care than wheat-based dough. You can use the method I used with my Lemon Blueberry scones to cut them into triangles, which is simpler and requires much finessing the dough.
A note about the Orange Vitality Young Living Essential Oil – this is optional but I can’t stop myself from adding it! It adds an amazing pop of flavor that I can’t get with just zest and juice.
