I love coffee. My entire family loves coffee. In fact, we joke that coffee is a food group. Nearly all of us drink our coffee black. Once in a while, though, I love a fancy cup of joe. And I love to have a really tasty coffee drink to share with friends especially when they like their coffee a little less intense than I do.
I’m also a CrockPot fan – it makes it so simple to throw something together and walk away. The flavor is so good because of the longer cooking time. The CrockPot allows time for all the flavorful spices to mingle. And we’re all busy, right? My CrockPot makes life easier.
My belly is happier with dairy-free beverages, and I know many of you have the same preference. So, I used SoDelicous unsweetened coconut milk beverage instead of cow’s milk. I love the clean flavor – most other dairy-free milks have a coconut or almond flavor depending on the type you use. Feel free to use another product but be aware that you’re adding a flavor and the final product will taste different than my original recipe.
Let’s talk about sweetening this tasty dairy-free treat – you can go one of two ways. Sweeten the entire batch or let each person sweeten their cup to taste. I’m not one for getting lots of calories from my coffee, so I like to use stevia. You could sweeten this with maple syrup or honey, too. If you want to get really authentic, stir in a little molasses. You’ll be so glad you did. The whipped coconut milk is necessary. It makes this a real dessert drink.
