Eating gluten-free and refined sugar-free while on the road is a challenge. My husband can attest to that. Whenever we hop in the car for more than a couple of hours, I have snacks on hand. Otherwise, I’m left hungry. And grumpy. And downright frustrated.
Road trips aren’t the only time food that travels is a good thing to have on hand. It’s great for days at the pool, the beach, long shopping trips, or even a morning of errands.
Fruits and vegetables always make it into my little travel cooler as do nuts and seeds. They’re so portable and quick to pack. For longer trips, I take muffins and granola. Sometimes I bake cookies for those moments when I want something sweet.
Don’t feel like you need to make all these right before you leave. Most of these recipes can be made ahead, wrapped, and frozen. I like to wrap muffins individually and cookies in sets of two.
